Not Cactus Ed Bread

2 1/4 cups whole wheat flour
1/2 teaspoon salt
1 teaspoon baking soda

1 egg, beaten
1 Tablespoon honey
1 cup plain yogurt

Mix 2 cups flour with other dry ingredients. Blend honey and yogurt with beaten egg.
Pour slowly into bowl of dry ingredients and mix as best you can (its hopeless), then slop it all onto the counter and knead for 5 minutes, adding remaining flour as necessary to keep a manageable dough. Shape into long low loaf, place on oiled baking pan and bake at 350-375 for 25 minutes. Best eaten fresh or heated with butter or whatever....deelishus.

Oh its bread. Its good, healthy, tasty bread. Its just Not Cactus Ed Bread. That would be dry and crusty.

By the way, I tried these three recipes in the past week and they were all very tasty. The Moroccan Sweet Potato Stew was especially yummy (I opted out of the fresh mint ).

I reduced the chili powder because my husband doesn't like things too spicy but it was still pretty hot. The soup consistency and the variation in each bite were good, though. I think I'll play a bit with the spices.

ALMOND PANCAKES!
For those who don't eat grains but hunger for that stack of pancakes in the morning, or for anyone really who wants something healthy, tasty and so simple. You can buy the almonds pre-ground or grind in your own mixer. Warning, these are really hearty. :P

Beat together
1 cup Almond Flour
3 eggs.
For added flavor, you may add
1 tsp. cinnamon
1 tsp. vanilla sugar
Melt 1 tablespoon butter or oil in a frying pan and cook over medium heat until both sides are firm. A couple minutes each side. NOTE: Make the pancakes small, no larger than 6 inches, as they don't stick together too well. Careful when flipping.

Serve with honey, maple syrup, berries, jam, ice cream - this even works with meaty toppings!

Organic Miso Soup

Prep Time: 5-10-minutes
Cooking Time: 15-20-minutes

Ingredients
2 cups filtered water
1 tbsp. organic miso
1 organic green onion
3 medium organic shiitake mushrooms

Optional Ingredients
1 small organic carrot
1/2 tsp. organic wakame flakes
2 tbsp. organic firm tofu

Prepping
Pour two cups filtered water into a small pot and turn the temperature to the low setting. Put one tbsp. organic miso into the water, and break it apart until it is well dissolved. Turn the temperature up to a medium setting. Dice one organic green onion into small pieces. Cut three organic shiitake mushrooms into your preferred size. Put the organic green onion and shiitake mushrooms into to pot along with any optional ingredients and stir.

Cooking
Let the organic miso soup cook for about 15-20-minutes while making sure to stir occasionally. The soup is ready a few minutes after its aromas read a medium level strength.

Serving
Pour your delicious and healthy organic miso soup into a soup bowl and enjoy!

Please post any nice recipes here!

At the weekend I was given a load of rainbow chard and this evening I had it for dinner, cooked as follows:

Rainbow chard with soy sauce, maple syrup and sesame seeds

Chop the rainbow chard and pan fry in a bit of oil until it wilts.
Add some soy sauce and maple syrup in equal amounts (check for taste until you like it).
Sprinkle over some sesame seeds. Serve with rice.

(NB: I ran out of maple syrup, so used honey.)

Yum! And takes about five minutes (the rice might take 10) so Light Speed, this could fit your criteria for quick, nutritious and healthy innit :nods:

LOL! Actually funny you should mention that Steve, because I caught a unicorn in my humane unicorn trap when I went out to water my vegetables in the garden earlier. This is what I am going to do with it tomorrow:

Roasted unicorn with imaginary unnamed perpetual spinach and imaginary as yet ungrown pumpkin

Retrieve unicorn from humane trap and prepare for the kitchen with as little engagement of Ne, Fi, and for the INFJs, Fe and Ni as possible.
Cut into beautifully shaped unicornial pieces and place in an oven dish at unicorn temperature, along with the chopped imaginary pumpkin that won't even grow until Sep/Oct.
Place dish into hot oven and cook until the unicorn begs you to stop.
Wilt imaginary spinach in real or imaginary pan until it looks tasty.
Serve all three together on an imaginary plate with really expensive imaginary wine 8)

(Obviously I'm not going to eat ALL the unicorn at once! I'll be freezing the rest of it in my imaginary freezer :-D )

Had a rare bout of cooking-itis yesterday and made Chocolate and Walnut Brownies. They were wilfully unhealthy, but I don't care because they tasted really good. :twisted:

Welsh Rarebits
(aka Croûte au fromage tartiné, Walisische Käseschnitte)
(10 Servings)

150 g Butter
500 g White Bread
400 g Cheddar
100 mL Beer
10 g Mustard powder
20 mL Worcestershire sauce
Salt and Pepper for seasoning

Mise en Place:

Reserve 50 g butter.

Slice bread into 10 slices and sauté in the rest of the butter till golden brown.

Grate cheese.

Method:

Combine grated cheese with reserved butter, beer, mustard powder, and Worcestershire sauce, and season to taste. The mixture should have the consistency of dough.

Spread cheese mixture onto bread slices. Brown in the oven/oven toaster.

May be served with slices of tomatoes or garnish.
