What do you think of it?
I enjoy it, possibly because I have a very dark and twisted sense of humour. Though I get that some people are hurt/offended by it, but personally I'm okay with it.
I also love the follow up phrase: "Too soon?"

However, gallows humour is also known as black humour.
Maybe Steve Jobs jokes told by Apple fans?

I think gallows humour is defined as humour in very dark situations--when someone makes a joke to relieve tension in what would otherwise be a humourless situation (eg. at a funeral or during a disaster). So your second example is closer to gallows humour, though neither are, really. Gallows humour is typically very dry.
