What do you think of it?

I enjoy it, possibly because I have a very dark and twisted sense of humour. Though I get that some people are hurt/offended by it, but personally I'm okay with it.

I also love the follow up phrase: "Too soon?"

I don't have any examples with me.

However, gallows humour is also known as black humour.

Maybe Steve Jobs jokes told by Apple fans?

Here's an example, although maybe just more warped than gallows. Either way, I love it!

Is this kind of thing gallows or just black? What is the difference between gallows and black?

I think gallows humour is defined as humour in very dark situations--when someone makes a joke to relieve tension in what would otherwise be a humourless situation (eg. at a funeral or during a disaster). So your second example is closer to gallows humour, though neither are, really. Gallows humour is typically very dry.
