Anyone else blessed and cursed by a Community Supported Agriculture share? I'm overwhelmed with veggies and herbs - many of which I don't even have a clue how I'm going to use.

Currently I have the following:
Tomatoes
Japanese eggplant
Kale
Mesclun greens
Carrots
Cucumber
Pearl onions
Walla Walla onions (used one in soup)
Easter egg radishes (I'm not a big radish fan but was happy with some I roasted a couple weeks ago)
Beet greens (at least I used them in soup!)
Cabbage
Green Pepper (roasted)
Jalapeno Pepper (roasted but not sure where I'll use them)
Corn
Golden Beets (roasted and ready to eat)
Parsley
Cilantro
Potatoes

Whenever I have an excess of veggies, I make/experiment with pizza!

One of my favorite pizzas is just radish and parmesan. Just use olive oil instead of tomato sauce. ^^

That calls for a soup and salad festival! :)

I'm also thinking of stuffed veggies or veggie stuffings - potatoes and radishes make good fillers, while peppers make good containers.
Even cabbages can be stuffed and braised.
And eggplant parmesan - if you aren't cheese-intolerant.

Wow! You have plenty. I only got a small backyard garden and a small piggery.

I would recommend you having piggies.

Some extra veggies can be given to the pigs for food.
